Siberian Sturgeon Caviar

Canaletto NEERO is obtained from the Siberian sturgeon (Acipenser Baerii), native to the river basins of Siberia and the Lake Baikal basin.

It is processed with the traditional “Malossol” method.

Egg size ranges from 2,5 to 3 mm and it has a grey basic colour, from pearl grey to gunmetal grey.

Available all year around.

For those who love intense flavors, canaletto NEERO is a fresh caviar, with a soft, fine and elegant taste.

Sometimes it is accompanied by a fresh final aromatic note.

In the kitchen it is very versatile, it goes well with light starch dishes, a moderate amount sour cream, soft bread or blinis as taught by the Russian tradition, but it can also be enjoyed in its pure form to bring out its decisive and satisfying aromatic flavor: the flavor intense Siberian caviar gives a moment of pure pleasure.

It takes about 8 years to make this caviar.

Mascarpone quenelle and Canaletto Caviar

Serves: 4

Ingredients

  • 200 grams of mascarpone
  • Lavender flavored oil to taste
  • 5 tablespoons of lemon powder
  • 4 tablespoons of Canaletto Caviar

Method

For the lemon powder: put the lemon zest in the oven at 60 ° for about an hour and let it dry (be careful to remove the white part); once ready and cold, chop it until it becomes powdery (you may use a mixer to help you with this process).

Lightly heat some extra virgin olive oil in a non-stick pan, add a few lavender flowers and leave them to macerate; filter the oil once you have reached the desired perfume and flavour. Mix the mascarpone cheese with your lavender oil* until it becomes almost frothy and form quenelles with the help of two spoons.

* If you wonder how to adjust the oil to the cheese, be sure the scent is not overwhelming and add the drops little by little.

As your final touch, add a teaspoon of Canaletto caviar and sprinkle the lemon powder on your freshly made quenelles.

Now have a seat and… Enjoy your meal!
